Mahon, from the Balearic island of Menorca, is usually found in its younger, softer form, often found in sandwiches and as a "snacking" cheese. This is its more serious big brother, aged for a year, during which time it is rubbed with olive oil several times. The texture is very firm, and the flavors are pleasantly sharp and nutty. Cut it into chunks to enjoy with dried fruit, or grate it and use like dry jack or parmesan.
Price is for 1 lb. The pieces vary in size but we try to ship as close to 1 lb. as possible.
