Mojo Rojo
This fabulous recipe from Bon Appetit from way back in 2013 replicates the famous red sauce from the Canary Islands. It is worth every second of making it.

Use this smoky, chile-based Mojo Rojo sauce to escape to the Canary Islands for a few moments. It is now ubiquitous throughout Spain (we had it served to us at three wine dinners in the Rioja region, along with grilled meat). It can also add color and heat to things that don't have a lot of flavor on their own, like blanched cauliflower, green beans, or broccoli.

8 garlic clove

2 dried guindilla peppers

2 teaspoons smoked paprika

1 teaspoon ground cumin

1 teaspoon kosher salt, plus more

1 cup olive oil

1 teaspoon sherry vinegar
Directions
Process garlic, chiles, paprika, cumin, and 1 tsp. salt in a food processor, occasionally scraping down sides of bowl, until a smooth paste forms.
With machine running, drizzle in oil and process until well blended. Add Sherry and 1 tsp. water and process to blend. Season with salt.
