Majorero Cheese 2052

This cheese comes from the island of Fuerteventura in the Canary Islands, off the north-eastern coast of Africa. Before the arrival of the Spanish the island was called "Maxorata", and "Majorero" is the pre-Spanish word for both the inhabitants of the island and the native goat, which contributes the milk for this cheese. This raw-milk cheese is coated in paprika and aged from between 45 and 90 days. The flavors are rich and complementary - buttery, nutty, somewhat tangy, and earthy. Have it with fresh fruit or a glass of wine.
