The essential ingredients to make a classic Spanish Cocido using white beans, garbanzos, or lentils: 2 Chorizo Bilbao, 2 Morcilla de Cebolla, a piece of bone-in jamón serrano ham steak and a cube of tocino (pancetta). Just add beans (you can use cooked or dried), a pinch of saffron, and a bay leaf. Dead simple and incredibly delicious.
Tips: If you use dried beans make sure to use your biggest pot - big Spanish white beans grow. To save time you can cook a fabulous fabada in a pressure cooker or Instant Pot. Or set your slow cooker on a timer and come home to a feast.

I lived in Spain for 10 years and discovered Fabada early on. It became (along with Cocido Madrileño and callos) my favorite dish. This brought back many happy memories. The quality of the meats and the exquisite taste of the morcilla and chorizo really made the dish sing! I will definitely recommend this to anyone and will purchase again.
