100% Xarel·lo fermented with indigenous yeasts in tank. Twice-weekly batonnage for a further 3 months in tank before bottling. No additives; unfined and unfiltered, and bottled with minimal sulfur. A bracingly serious, austere white that is just amazing. The antidote to fruity whites this wine is unabashedly old school, with crisp dry minerality and a touch of oxidation.
Can Sumoi is a project between life long friends Pepe Raventos (or our best selling Raventos I Blanc) and Francesc Escala. They work the farm biodynamically (certified organic) and the wines all undergo a natural fermentation with no fining or filtering. Made in the traditional method with no additives, stabilization or filtration. Harvested on August 24th (a leaf day) in small bins and underwent primary fermentation naturally with indigenous yeasts in stainless steel tanks for 19 days. This was followed by spontaneous malolactic fermentation and batonnage for three months, twice per week.
