Navazos-Palazzi 'Vermut Rojo' Red Vermouth

Navazos - Palazzi 'Vermut Rojo' Red Vermouth - The Spanish Table

Navazos-Palazzi 'Vermut Rojo' Red Vermouth

This Spanish Vermouth is the gold standard, crafted with the same care as everything from Equipo Navazos and PM Spirits. It's a perfect blend of off-dry Oloroso sherry and natural botanicals like coriander, juniper, elderflower, and bitter orange peels. Enjoy it with a splash of soda and garnish with an orange wedge and an olive - pair with a savory can of  of scallops in Caldeirada sauce.

This base of this vermouth is Oloroso Sherry which aged for over five years in oak barrels. The botanicals include wormwood, savory, coriander, licorice, elderflower, juniper, bitter orange peel, and grapefruit peel – all of which can be found growing wild in the fields and mountains of Andalusia. The base wine is blended with concentrated grape must for sweetness before being fortified to 17.5% with neutral grape spirit. Individually macerated botanical extracts are blended in specific proportions to achieve the desired flavor profile. Bottled in 2022, 6000 bottles of this vermouth were produced.

"This excellent vermouth is a collaboration between Equipo Navazos, a boutique sherry négociant that has been instrumental in the revival of sherry over the last 20 years, and Nicolas Palazzi of PM Spirits, which imports small batches of extraordinary spirits. The stamp of oloroso is clear on this lightly sweet blend. It is infused with spices and herbs to create a mellow, complex vermouth that refreshes as well as intrigues." - Eric Asimov, July 2023 | The New York Times
