Spain's most famous, and famously pungent, blue cheese. Made from a blend of raw cows, goats, and sheep's milk, and aged for between 2 and 4 months in natural limestone caves. A chunk of Cabrales slowly melting on top of a juicy steak is a thing of beauty and a taste revelation. Or pair it with a sweet PX sherry for a stunning sweet-and-savory finish to your meal.
Price is for 1 lb. The pieces vary in size but we try to ship as close to 1 lb. as possible.
I've enjoyed the Pimenton varieties from Rey Da La Vera for probably a dozen years (but we don't use it all that frequently, I just finished a pair of 2.6 oz tins (Picante and Dulce) after that length of time), and found The Spanish Table as a source for both Dulce and Picante, also Agrodulce (which I hadn't been able to find way back then). As far as smoked paprika goes, I'd rate this very highly.
