Spain's acorn-grazing black Iberian pigs are legendary for their richly marbled meat and incredible, melt-in-your-mouth ham. Ham (jamón) is made from the back legs, whereas this is "paleta" - the smaller front leg. It's a little less tender than the fatter ham, but some actually prefer it, as the flavors are more concentrated, giving you more bang for your buck. Serve at room temperature to let the full flavor really shine. IMPORTED.
