At sunset, monks of Scala Dei shared a jug of wine with the farmers, a daily ritual after tending vines that still shape this landscape. From dry-farmed, 50 to 70 year old vines in Montsant’s rocky hills, Vespres is a silken field blend of Garnacha, Cariñena, and Syrah. Red fruit, wild herbs, and a whisper of balsamic lift its fresh, quietly contemplative core. Unfiltered, unhurried, and very Mediterranean.
