This is the end bit of a serrano ham leg, with the bone, a decent amount of meat, and the skin still attached. These make the most amazing, meaty stock. If you're cooking dried beans from scratch, toss one of these in the pot and let those beans simmer in the hammy goodness. Please note - these hocks are salt-cured and air-dried, not smoked. (Also - they freeze extremely well.)
